Job description
For our restaurant, Barraca Rodizio Grill & Bar in Amsterdam, specialising in authentic Brazilian rodízio cuisine, we are looking for a Brazilian Grill Master (churrasqueiro). In this position, you will be responsible for preparing traditional Brazilian churrasco dishes according to methods from Brazilian food culture.
This position is only suitable for a professional who has been trained in the Brazilian churrasco tradition. The required knowledge, techniques and skills are culturally and traditionally linked to Brazil and cannot be replaced by regular grill or barbecue experience from other cuisines.
As a Brazilian Grill Master, you are a key figure in our kitchen and are responsible for the authenticity and quality of our churrasco concept. You work according to traditional methods that have been passed down from generation to generation in Brazilian churrasco and rodízio restaurants.
Job requirements
Tasks and responsibilities
Preparing, seasoning, marinating and grilling various types of meat according to traditional Brazilian churrasco techniques, including picanha, fraldinha, cupim, costela and linguica.
Working with large churrasco grills and vertical and horizontal spits (espetos), as is customary in Brazilian rodízio kitchens.
Controlling fire, temperature and cooking techniques, including slow roasting, open fire grilling and indirect heat.
Cutting and serving meat in authentic rodízio style, directly from the spit; a specialised skill specific to Brazilian grill restaurants.
Preparing and composing traditional Brazilian side dishes and garnishes, such as farofa and pão de alho.
Monitoring quality, taste, texture and presentation.
Transferring specialist knowledge to kitchen staff and training colleagues in traditional Brazilian grilling and cutting techniques.
Complying with hygiene and food safety regulations in accordance with Dutch legislation and regulations (HACCP).
Job requirements
Demonstrable experience as a churrasqueiro or Brazilian Grill Master, gained in Brazilian rodízio restaurants or other authentic Brazilian kitchens.
In-depth knowledge of Brazilian meat cuts, seasoning, grilling techniques and serving styles.
Experience working with open fires and traditional churasco grills and spits.
Able to transfer traditional knowledge and skills to colleagues by providing appropriate training.
